At Ichiban, dinner is cooked right in front of you. Our hibachi chefs spin spatulas, flip shrimp tails into their hats, and build the onion volcano until it erupts in flame. Every table gets its own performance.
Behind the show is serious cooking: filet mignon, ribeye, jumbo shrimp, scallops, and lobster tail seared to order, with hibachi vegetables and fried rice made fresh at your seat. For the full experience, try the Imperial Dinner: jumbo shrimp, chicken, and your choice of ribeye or filet mignon.
Sushi Worth Sitting Still For
Not every night needs a show. At our sushi bar, the chefs work just as carefully, only more quietly. Every roll, nigiri, and sashimi plate is made to order with fish we bring in fresh.
Start with a local favorite, the Blue Ridge Roll: spicy scallops and cucumber topped with crab and red tobiko. Go bold with the Red Dragon’s lobster tempura or the Kobe Roll’s seared steak over spicy king crab. Purists can order a Sashimi Deluxe or a chirashi bowl, and our vegetarian rolls, like the Soho Roll, get the same care.
Hibachi Is Better with a Full Table
Each hibachi grill seats eight, and that is the best way to enjoy it: every seat filled with your family, friends, or team, all facing the chef and cheering when the volcano erupts.
Smaller parties are always welcome, though you may share the grill with other guests, which is how a lot of good conversations start. Groups larger than eight can be seated at neighboring grills. Call ahead and we will arrange it.
Birthdays Are Kind of Our Thing
For years, Asheville has brought its birthdays to Ichiban, and we take that seriously. Tell us you are celebrating when you book, and our staff will give your guest of honor a special night to remember.
Flooded, Not Finished
Ichiban means “number one” in Japanese, and for years our home in Biltmore Village was where Asheville came for its number-one nights. In September 2024, Hurricane Helene sent floodwaters through the village, and our restaurant was lost along with so much of our neighborhood.
We never stopped planning our return. We kept our chefs, our recipes, and the memory of every birthday we celebrated, and our regulars kept asking when we would be back.
Now we are back at 34 Tunnel Road, with more room, more grills, and new dishes on the menu. The address has changed, but the fire at the grill is the same.
